Coconut Date Porcupines
|Granulated sugar||3⁄4 Cup (12 tbs)|
|Snipped pitted dates||1 Cup (16 tbs)|
|Eggs||2 , well beaten|
|Vanilla extract||1 Teaspoon|
|Chopped walnuts||1 Cup (16 tbs)|
|Cornflakes||1 Cup (16 tbs)|
|Sugar coated toasted rice cereal||1 Cup (16 tbs)|
|Flaked coconut||1 1⁄2 Cup (24 tbs)|
1. In skillet blend sugar with dates and eggs. Cook over medium heat, stirring constantly, until mixture pulls away from sides of pan (about 5 minutes); remove from heat.
2. Stir in vanilla and walnuts; then carefully stir in cereals. Cool slightly.
3. With hands, moistened with cold water, shape mixture into small mounds; roll each in coconut. Refrigerate until served. Makes 2 dozen.
