|Coconut||2 1⁄2 Cup (40 tbs)|
|Orange juice||1⁄4 Cup (4 tbs)|
|Orange rind||1 Teaspoon, grated|
|Cream||1 1⁄4 Cup (20 tbs)|
|Sugar||1 1⁄2 Teaspoon|
Make the crepes using the Orange Crepe Batter.
Melt the butter in a saucepan and add the sugar, coconut, orange juice and one teaspoon of grated orange rind.
Cook over a low heat until thickened, stirring constantly.
Fill the crepes with the coconut mixture.
Roll up and place on a buttered shallow baking dish.
Bake in a350°F (180°C) oven for 7 minutes.
Whip the cream with the sugar and orange rind.
Spoon the cream over the crepes.
