|Butter||1⁄2 Cup (8 tbs)|
|Brown sugar||1⁄2 Cup (8 tbs)|
|Lemon||1 , finely grated rind and juice|
|Flaked coconut||4 Tablespoon|
|Sponge cake||1 (7 Inch)|
|Jam||1 Teaspoon (Leveled)|
Cream the butter and brown sugar with the lemon rind and juice.
Add the coconut.
Split the sponge cake across the center.
If not spread with jam, cover the bottom half with a little jam then half the coconut mixture.
Put the two halves together again.
Spread the top of the sponge with the rest of the coconut mixture and brown under the broiler.
