1. Preheat oven to 375Â° F.
2. Using electric mixer at high speed, beat together diet margarine and sugar replacement in medium bowl until creamy.
3. With mixer at low speed, stir in coconut, orange rind and orange juice; blend well. Stir in sifted flour, baking powder and salt; blend thoroughly.
4. Drop dough by rounded teaspoonfuls 1 1/2 inches apart onto cookie sheet with nonstick finish. Bake for 10 to 12 minutes. Remove cookies to wire rack to cool.
