Delicately Crispy Coconut Cookies
|Sugar||1 Cup (16 tbs)|
|Brown sugar||1 Cup (16 tbs)|
|Cream of tartar||1 Teaspoon|
|Butter||1 Cup (16 tbs), softened|
|Oil||1 Cup (16 tbs)|
|Vanilla extract||1 Teaspoon|
|Almond extract||1⁄2 Teaspoon|
|Flour||3 1⁄2 Cup (56 tbs)|
|Oatmeal||1 Cup (16 tbs)|
|Coconut||1 Cup (16 tbs)|
|Rice krispies||1 Cup (16 tbs) (or Wheaties)|
|Nuts||1⁄2 Cup (8 tbs), chopped|
Preheat oven to 350°.
Combine first 10 ingredients and beat for 2 minutes on medium speed until fluffy.
Add flour and beat well.
Stir in remaining ingredients.
Drop by rounded teaspoonfuls onto cookie sheets.
Flatten slightly with glass or fork after dipping in sugar.
Bake for 10-14 minutes until golden brown.
Remove to cooling rack.
Makes 6 dozen super cookies.
