Coconut Pecan Rounds
|Butter||1 Cup (16 tbs)|
|Granulated sugar||3⁄4 Cup (12 tbs)|
|Packed brown sugar||3⁄4 Cup (12 tbs)|
|All purpose flour||2 1⁄2 Cup (40 tbs)|
|Baking powder||1 Teaspoon|
|Flaked coconut||1 Cup (16 tbs)|
|Pecans||3⁄4 Cup (12 tbs), chopped|
Cream together butter and sugars.
Add eggs, one at a time, blending well after each.
Beat in vanilla.
Thoroughly combine flour, baking powder, and salt; stir into creamed mixture.
Stir in coconut and pecans.
Form into 2 rolls, 1 1/2 inches in diameter.
Wrap in waxed paper; chill thoroughly.
Slice 1/4 inch thick and place 2 inches apart on ungreased baking sheet.
Bake at 375° for 8 to 10 minutes.
