Coconut Eyeballs are a fun and allergy friendly sweet treat for Halloween! Perfect for a classroom party!
Unsweetened shredded coconut | 2 Cup (32 tbs) , divided | |
Coconut oil | 1 Tablespoon ((in liquid form)) | |
Honey | 1/4 Cup (4 tbs) | |
Light coconut milk | 1/4 Cup (4 tbs) | |
Salt | 1 Pinch | |
Dried cherries | 17 |
MAKING
In a food processor, place all the ingredients, except the cherries and pulse until it forms a paste, about 1 minute.
Using an ice cream scoop, take out the mixture and shape into small balls. Moisten your hands to prevent sticking.
Lightly flatten each ball and gently press a dried cherry into the center of each one. Place in the refrigerator for 30-60 minutes.
