Minted Melon And Strawberry Cocktail
|Hulled and sliced strawberries||1⁄2 Cup (8 tbs)|
|Cucumber||2 Inch, sliced and quartered|
|Finely grated orange rind||1|
|Chopped mint||1 Tablespoon|
|Mint sprigs||2 (For Garnish)|
Cut the melon in half and discard the seeds.
Cut the flesh into 1 cm/1/2 inch cubes or scoop into balls.
Place the melon in a bowl with the strawberries and cucumber.
Mix the orange rind and juice with the chopped mint, then pour onto the salad and mix gently together.
Shred the lettuce and use to line the melon shells.
Spoon the salad on top, pouring in any orange juice from the bowl.
Serve chilled as an appetizer, garnished with sprigs of mint.
