Tom Collins Cocktail

Some say this elegant drink began as the John Collins, named for a waiter at Limmer’s Old House in London. Eventually, someone made the cocktail with Old Tom Gin and hence, it became the Tom Collins. This theory is made more likely by the Great Tom Collins hoax of 1874, when people joked about a non-existent Tom Collins.
Ingredients
  Lemon juice 1⁄2 Ounce
  London dry gin 2 Ounce
  Sugar 1⁄2 Teaspoon, powdered
  Lemon wedges 1 Medium (For garnish)
  Maraschino cherries 1 Medium (For garnish)
  Ice 1⁄2 Cup (8 tbs)
Directions

MAKING
1. Combine gin, lemon and sugar in a collins glass that is 3/4 full of cracked ice.
2. Stir well to dissolve the sugar.
3. Top with club soda.

SERVING
4. Garnish with lemon wedge and maraschino cherry and serve with a stirring stick.
