|Prepared citron||6 Cup (96 tbs)|
|Cider vinegar||2 Cup (32 tbs)|
|Water||2 Cup (32 tbs)|
|Sugar||2 Cup (32 tbs)|
|Lemon||1 , thinly sliced|
|3 inch cinnamon stick||2|
|Whole cloves||2 Teaspoon|
|Whole allspice||2 Teaspoon|
To prepare citron, pare, then cut in medium-thin slices and divide these into 1-or 2-inch pieces.
Soak overnight in salted water, using 2 tablespoons pickling salt to 4 cups cold water.
Next morning drain off brine.
Pour fresh hot water over citron in saucepan and cook gently until pieces are tender.
Now combine next four ingredients and add the spices in a cheesecloth bag.
Bring to a boil and let boil 5 minutes.
Add drained citron and simmer until the fruit becomes transparent.
Seal in hot sterilized jars.
