Easy Prawn Cocktail

  Lettuce heart 1 Small
  Pickled prawns 1⁄2 Pint
  Mayonnaise 2 Fluid Ounce (1/2 gill)
  Tomato puree/Tomato ketchup 1 Tablespoon
  Chili vinegar 1 Teaspoon
  Tarragon vinegar 1 Teaspoon
  Salt 1 1⁄4 Pinch (good pinch)
  Cayenne pepper 1 1⁄4 Pinch (good pinch)
  Lemon 1

Wash and dry the lettuce very well—pick out the tiny leaves and break into very small pieces.
Arrange in cocktail glasses.
Put the prawns on top.
Mix the mayonnaise with the tomato ketchup or puree—to obtain this rub one large tomato through a fine sieve.
Add the vinegars and seasoning.
Put over the prawns and garnish with a piece of lemon and a dusting of cayenne pepper.
