Ginger Cocktail

Ingredients
  Lemon juice 2 Cup (32 tbs)
  Ginger 500 Gram
  Water 4 Cup (64 tbs)
  Sugar 6 Cup (96 tbs)
  Potassium meta bisulphite 2 1⁄2 Gram
Directions

Peel ginger and cut into pieces.
Add 1/4 cup water and liquidise to crush ginger.
Strain the juice.
In the residue, add 1 1/4 cup water and liquidise again.
Strain the juice.
Mix both the extractions.
Combine sugar and 3 1/2 cups water in a pan and place on fire.
Stir till sugar is dissolved.
When it comes to a boil, add a little lemon juice to clarify the syrup.
Let boil for a minute more.
Remove from heat.
Add ginger juice and strain the syrup.
When thoroughly cold add lemon juice.
Dissolve preservative in four tablespoons water and add to the cocktail.
Fill the cocktail in sterilized bottles leaving a gap of 1 1/2 inches on the top.
Cork and seal the bottles.
Store bottles in a cool, dry place.
