Ginger Flavored Fruit Cocktail

  Fresh ginger slices 8
  Chopped candied ginger 60 Milliliter (4 Tablespoon)
  Chinese pickled ginger pieces 12 , thinly sliced
  Lychee juice 60 Milliliter (1/4 Cup)
  Sugar 4 Teaspoon (20 Milliliter)
  Lychee 250 Milliliter (1 Cup)
  Pineapple chunks 250 Milliliter, canned (1 Cup, Fresh / Canned)
  Sliced peaches 125 Milliliter (1/2 Cup, Fresh / Canned)
  Slivered almonds 125 Milliliter, toasted in oven (1/2 Cup)
  Red cherries 8

1. Combine fresh ginger, candied ginger, pickled ginger, lychee juice and sugar in a sauce pan. Bring to a boil and cook for 2 minutes. Discard all ginger slices except candied ginger. Cool and set aside.
2. Drain pineapple, peaches and lychee; place in a serving bowl. Pour in cooled ginger-flavored lychee juice. Toss fruits in juice. Chill in refrigerator, stirring occasionally to blend flavors.
