Eggplant And Minced Clams
|Clams||7 Ounce, minced|
|Eggs||3 , beaten|
|Bread crumbs||1 1⁄2 Cup (24 tbs)|
|Melted butter||4 Tablespoon|
Peel and cube eggplant; boil in salted water until tender.
Drain clams; add clams and eggs to eggplant.
Mix bread crumbs with butter.
Add 1/2 cup crumbs to eggplant mixture.
Place in baking dish; top with remaining crumbs.
Bake in 350-degree oven for 45 minutes.
