Creamed Clams

Ingredients
  Canned minced clams 15 Ounce (2 Cans, 7 1/2 Ounce Each)
  Butter 2 Tablespoon
  Dry mustard 1⁄4 Teaspoon
  Ginger 1⁄8 Teaspoon
  Onion salt 3⁄4 Teaspoon
  Cayenne 1 Dash
  Lemon juice 1 Tablespoon
  Arrowroot 2 Tablespoon
  Light cream 1 Cup (16 tbs)
  Canned water chestnuts 5 Ounce, sliced (1 Can)
  Shredded green onions 1 Teaspoon
  Sherry 1 Tablespoon
Directions

MAKING
1) In a skillet, combine the clams and butter, simmer for 5 minutes.
2) Stir in the dry mustard, ginger, onion salt, cayenne and lemon juice; mix thoroughly
3) In a bowl, combine the arrowroot and cream together.
4) Stir into the clams, stir continuously and cook over medium heat, until thickened.
5) Then stir in the sliced water chestnuts.
6) Just before serving, stir in the shredded green onions and sherry.

SERVING
7) Serve the Creamed Clams or over toast or in patty shells.
