Deep Fried Clam Strips

Ingredients
  Clams 8 Large (5 To 6 Inches Each)
  Flour 4 Tablespoon
  Eggs 2 , beaten
  Pepper 1⁄4 Teaspoon
  Onion 1⁄2 Teaspoon, grated
  Shortening 2 Tablespoon
Directions

Cut clams into 1/4 wide strips (save the necks for chowder).
Mix flour, eggs, pepper, and onion.
Wash clam strips, shake off excess water and roll in flour mixture.
Drop into hot shortening in a large frying pan.
When golden brown all over, take out and drain on paper towel.
