Citrus Upside-Down Buffins

These citrus upside down muffins have the best part tucked away at the bottom and hidden under the frist layer like all good upside down recipe inventions. A flavorful blend of grapefruit and orange with brown sugar, milk and cinnamon, these muffins will make your guests begging for the recipe. A real winner, this upside down muffin is lovingly called the citrus upside down buffin!
  Mandarin orange sections 284 Milliliter
  Packed brown sugar 125 Milliliter
  All purpose flour 250 Milliliter
  Baking powder 7 Milliliter
  Salt 1 Milliliter
  Butter/Margarine 60 Milliliter
  Milk 4 Tablespoon
  Egg 1
  Granulated sugar 1 Tablespoon
  Cinnamon 1 Teaspoon

In a small bowl, mix together the undrained grapefruit and mandarin orange sections.
Spoon evenly into ramekins.
In another small bowl, mix together brown sugar and 3 tbsp (45 mL) flour.
Sprinkle over fruit and dot with 3 tbsp (45 mL) butter.
Bake in preheated oven for 15 minutes.
In a large bowl, combine flour, sugar, baking powder and salt.
Cut in 4 tbsp (50 mL) butter.
In a measuring cup, add enough milk to beaten egg to make 1/2 cup (125 mL).
Add to flour mixture.
Stir until well blended.
Drop batter by spoonfuls over hot fruit cups to form biscuits.
Sprinkle with sugar and cinnamon.
Bake in preheated oven for 20 to 25 minutes or until golden brown.
Serve warm.
