Citrus Salmon With Mesclun And Raspberry Vinegar

Ingredients
  Salmon fillets 4 (About 3/4-Inch Thick)
  Salt To Taste
  Pepper To Taste
  Orange 1 , freshly squeezed
  Lemon 1 , freshly squeezed
  Mesclun 12 Ounce, washed, dried
  Olive oil 2 Tablespoon
  Raspberry vinegar 1 Tablespoon
Directions

GETTING READY
1) Preheat the broiler.

MAKING
2) In a heavy broiling tray, place the salmon, season with the salt and pepper, then drizzle the orange juice and lemon juice evenly over the fish.
3) Place the fish 4 inches from the heat and broil for about 7 minutes until the fillets are just cooked through.
4) In a large mixing bowl, sprinkle the mesclun lightly with the salt and pepper, drizzle over the olive oil and raspberry vinegar and toss the greens lightly.

SERVING
5) Place the mesclun equally on 4 serving plates, top each with a salmon fillet and serve immediately.
