Citrus And Fresh Herb Marinades

  Orange 1 , grated for rind and squeezed for the juice
  Olive oil 1⁄2 Cup (8 tbs)
  Dry white wine 4 Tablespoon
  White wine vinegar 4 Tablespoon
  Chives 1 Tablespoon, snipped
  Marjoram 1 Tablespoon, chopped
  Salt To Taste
  Pepper To Taste
  Lemon grass stalk 1
  Finely grated lemon rind 1
  Lemon 1 , juiced
  Sesame oil 4 Tablespoon
  Light soy sauce 2 Tablespoon
  Ground ginger 1 Pinch
  Cilantro 1 Tablespoon, chopped
  Lemon 1 , finely grated rind
  Lemon juice 4 Tablespoon
  Balsamic vinegar 1 Tablespoon
  Red wine vinegar 2 Tablespoon
  Virgin olive oil 2 Tablespoon
  Oregano 1 Tablespoon, chopped
  Basil 1 Tablespoon, chopped

1. To prepare the Orange, Chive & Marjoram Marinade, in a small bowl, combine the rind and juice of the orange with all the remaining ingredients and whisk with a for or stir until well blended.
2. To prepare the Thai-spiced Lime & Cilantro Marinade, lightly crush the lemon grass with the flat end of a knife or cleaver and add to a small bowl. Add the remaining ingredients and whisk well.
3. To prepare the Basil, Lemon & Oregano Marinade, in a small bowl, combine the ingredients and stir well to blend.
4. Season the marinades according to taste.

5. Store the marinades covered, in the refrigerator or at room temperature, until ready to use.

6. Use them to marinate foods or to baste while grilling and barbecuing.
