Quick Crystallized Citrus Peel
|Sugar||2 Cup (32 tbs)|
Select bright fruit with a thick peel.
Wash, cut into halves, and remove pulp and membrane inside.
Cut peel into 3/4-inch strips or into wedges.
Place in saucepan and cover with 2 quarts water.
Boil for 5 minutes.
Drain; repeat process 3 times to remove bitter flavor.
Do not boil more than 5 minutes each time, or fruit will be overcooked.
Drain peel and lay on kitchen towels.
Press gently to remove excess moisture.
Combine 2 cups sugar and 1 cup water.
Boil until sugar is dissolved.
Add drained peel and cook over low heat for 10 minutes.
Cover and let stand overnight.
Then cook over low heat until most of the syrup is absorbed.
Watch for scorching.
Lift peel from syrup and roll in granulated sugar.
Place on rack to cool.
Roll again in sugar.
Store in container with a loose lid.
Peel will keep for 2 to 3 weeks.
