Simple Citrus Terrine
|Lemon jelly||3 Ounce (1 Packet)|
|Boiling water||150 Milliliter|
|Grated zest||1 Tablespoon|
|Lime juice||2 Tablespoon (Of 1 Lime)|
|Light evaporated milk||400 Gram, chilled (1 Can)|
|Whipping cream||150 Milliliter, whipped to form soft peaks|
Line a 1kg (2lb) loaf tin with clingfilm.
Dissolve the jelly in the boiling water and stir in the lime zest and juice.
Leave to cool.
Meanwhile, whisk the evaporated milk until it has doubled in volume, then gradually whisk in the cooled jelly.
Pour the jelly mixture into the prepared tin and put in the refrigerator to set, about 2-3 hours.
