Citrus Salmon

This is a healthy seafood dish that is easy to prepare and time friendly. This dish can be prepared and refridgerated ahead of time. This dish encorporates the sweet and sour tastes associated with oranges and lemons. The additional spices complete the dish. A few optional ideas: marinade the salmon in orange juice for an hour and/or add fresh chopped garlic. Feel free to be creative !
Ingredients
  Salmon filet 6 Ounce
  Cucumber slices 6 (About 1/8 Inch Thick)
  Extra virgin olive oil 2 Tablespoon
  Thyme 1⁄2 Teaspoon
  Dill weed 1⁄2 Teaspoon
  Kosher salt To Taste
  Cracked black pepper To Taste (Fresh)
  Orange slice 4
  Lemon slices 4
Directions

Preheat oven to 425
Layout a piece of aluminum foil
Slice cucumber and arrange in pairs of two on foil
Place salmon on top of cucumbers
Drizzle with evoo
Sprinkle with thyme and dill weed
Salt and pepper to taste ( less salt tan pepper )
Arrange orange and lemon slices to cover salmon
Fold up tin foil loosly
Place packet on cooking tray or shallow baking dish
Repeat for multiple servings
Bake for 25-30 mins or until desired doness is met
Discard cucumbers and serve hot

Story
There is no touching story behind this recipe other than I just wanted to eat a piece of fresh fish that was not covered in unhealthy oils, saturated in butter or dried out from over baking or broiling. This dish solved my dilema and became a favorite amongst many. Hope you enjoy.
