Citrus Grilled Swordfish
|Unsweetened grapefruit juice||1⁄4 Cup (4 tbs)|
|Reduced calorie margarine||2 Tablespoon, melted|
|Grated grapefruit rind||1 Teaspoon|
|Celery salt||1⁄4 Teaspoon|
|Swordfish steaks||24 Ounce (2 Pieces, 12 Ounce Each, 1 Inch Thick)|
|Vegetable cooking spray||1|
|Finely chopped hazelnuts||2 Tablespoon, toasted|
Combine first 5 ingredients in a small bowl.
Place swordfish steaks in a shallow dish; pour grapefruit juice mixture over steaks.
Cover and marinate in refrigerator 1 hour.
Remove steaks from marinade; set aside.
Bring marinade to a boil in a small saucepan; boil for 2 minutes.
Coat grill rack with cooking spray; place on grill over medium-hot coals.
Place steaks on rack, and cook for 8 to 10 minutes on each side or until fish flakes easily when tested with a fork, basting frequently with marinade.
Transfer to a serving platter, and sprinkle with hazelnuts.
Garnish with grapefruit sections.
