Sparkling Citrus Mould
|Canned grapefruit sections in juice||8 Ounce (1 Can)|
|Orange juice||3⁄4 Cup (12 tbs) (Adjust Quantity As Needed)|
|Unflavored gelatin||1 Tablespoon (1 Envelope)|
|Low calorie orange carbonated beverage||1 Cup (16 tbs), chilled|
|Lemon juice||1 Tablespoon|
|Orange sections||1⁄2 Cup (8 tbs)|
Drain grapefruit, reserving juice.
Add enough orange juice to reserved juice to measure 1 cup liquid; soften gelatin in the juice mixture.
Stir over low heat till dissolved.
Add orange beverage and lemon juice.
Chill till partially set (consistency of unbeaten egg whites), Cut up orange and grapefruit sections; fold into gelatin.
Turn into a 3-cup mold.
Chill till firm.
