Cinnamon Blintzes

Ingredients
  Eggs 9
  Flour 2 Cup (32 tbs)
  Milk 4 Cup (64 tbs)
  Browned butter 1 Tablespoon
  Cinnamon sugar 1 Tablespoon
Directions

MAKING
1) Using an electric mixer, beat the eggs well
2) In a bowl combine the flour and milk; beat till smooth
3) Add in the eggs and mix well
4) On a hot greased skillet, pour the batter to cover the base of the skillet
5) Tilt to spread evenly
6) Brown on one side and then other side
7) Repeat with the remaining batter
8) Using a butter knife, spread each cake with the browned butter and sprinkle in cinnamon sugar
9) Roll the cakes like that of a jelly roll and keep warm to serve

SERVING
10) Serve along with some maple syrup or honey
