Cinnamon Blanc Mange

Ingredients
  Milk 2 1⁄2 Cup (40 tbs)
  Cornstarch 1⁄4 Cup (4 tbs)
  Brown sugar 1⁄3 Cup (5.33 tbs), firmly packed
  Salt 3⁄8 Teaspoon
  Cinnamon 1 Teaspoon
  Almond extract 1 1⁄6 Teaspoon
  Butter 1 Tablespoon
Directions

Scald 2 cups of the milk in top of double boiler.
Combine cornstarch, sugar, salt and cinnamon and mix until smooth with remaining cold milk.
Stir carefully into the scalded milk and cook over boiling water, stirring occasionally, about 15 minutes or until thick and smooth.
Add flavoring and butter, mixing well.
Serve warm or cold with cream if desired.
A spoonful of tart red jelly makes a colorful, tasty garnish.
