Cinnamon Crisps

Ingredients
  Butter 4 Ounce (125 Gram)
  Caster sugar 7 Ounce (1 Cup Or 220 Gram)
  Egg 1
  Flour 6 Ounce (1 1/2 Cups Or 185 Gram)
  Baking powder 1⁄2 Teaspoon
  Soda bicarbonate 1⁄2 Teaspoon
  Ground cinnamon 2 Teaspoon
Directions

1. Place butter and 3/4 cup / 170 g / 5 1/2 oz sugar in a bowl and beat until light and fluffy. Add egg and beat well.
2. Sift together flour, baking powder and bicarbonate of soda and stir into butter mixture. Turn dough onto a floured surface and knead briefly. Wrap in plastic food wrap and refrigerate for 30 minutes or until firm.
3. Place cinnamon and remaining sugar in a small bowl and mix to combine. Roll dough into small balls, then roll balls in sugar mixture. Place 5 cm / 2 in apart on lightly greased baking trays and bake at 180°C/350°F/Gas 4 for 8 minutes or until golden. Remove to wire racks to cool.
