Vanilla Cafe Brulot
|Thinly peeled orange rind||1 Small|
|Vanilla pod/1 teaspoon vanilla extract||1|
|Brandy||1 1⁄2 Cup (24 tbs)|
|Piping hot black coffee||6 Cup (96 tbs)|
Place sugar, orange rind, and vanilla pod in heatproof bowl; bruise rind with wooden spoon.
Pour brandy into small saucepan; place over low heat until heated through.
Pour over sugar mixture.
Ignite; stir constantly 30 seconds.
Extinguish flames with hot coffee.
Remove orange rind and vanilla pod.
