Seckel Pear Chutney
|Seckel pears||2 Pound, peeled, cored, and diced|
|Raisins||1 Cup (16 tbs)|
|Minced crystallized ginger||1⁄2 Cup (8 tbs), minced|
|Onion||1 , chopped fine|
|Garlic||2 Clove (10 gm), minced|
|Mustard seed||1 Tablespoon|
|White wine vinegar||2 Cup (32 tbs)|
|Firmly packed light brown sugar||1 1⁄2 Cup (24 tbs)|
|Red pepper flakes||1⁄2 Teaspoon|
Combine all the ingredients in a large heavy stainless steel or enameled saucepan, bring to a boil, skimming, and simmer, stirring occasionally, for 45 minutes to 1 hour or until the chutney is thick and brown.
Transfer to sterilized jars, filling to within 1/2 inch of the top, and process in a simmering water bath for 10 minutes.
Store in a cool, dark place.
