Laverne's Quick Chutney

Ingredients
  Butter/Margarine 1⁄4 Cup (4 tbs)
  Turmeric 1 Teaspoon
  Cinnamon sticks 2
  Powdered coriander 1 Teaspoon
  Salt 1⁄2 Teaspoon
  Mustard seed 1 Teaspoon
  Zucchini 2 Cup (32 tbs), cut into 1/2 inch cubes
  Packed brown sugar 1 Cup (16 tbs)
  Lemon 1 , quartered and thinly sliced
  Canned tomato 15 Ounce, drained
  Canned crushed pineapple 8 Ounce, drained
  Canned chunk pineapple 20 Ounce, drained
  Vinegar 1 Cup (16 tbs) (Scant)
Directions

Melt butter in heavy frying pan and add seasonings.
Saute zucchini, add brown sugar and lemon and cook 2 or 3 minutes, stirring.
Add tomatoes, crushed and chunk pineapple, and vinegar.
Simmer 5 to 10 minutes, stirring often.
Remove cinnamon stick.
Serve hot, or chill in refrigerator.
Lasts a long time in the refrigerator.
