Sweet And Sour Tomato Chutney
|Tomatoes||2 Kilogram, chopped roughly|
|Malt vinegar||2 Cup (32 tbs)|
|Grated ginger||100 Gram|
|Crushed garlic||100 Gram|
|Kismis||1 Cup (16 tbs) (Sultanas)|
|Chopped pitted dates||1 Cup (16 tbs)|
|Red chili powder||1 Tablespoon|
|Sugar||1 1⁄4 Cup (20 tbs)|
Microwave the tomatoes in a large deep bowl for 20 minutes until mushy, stirring occasionally.
Pour in the vinegar and mix in the other ingredients, and microwave, stirring in between, for 15-20 minutes until the chutney is of a thick consistency.
Cool the chutney and pour it into an air tight sterilised jar.
This chutney will keep for about 6 months.
