Mild Peach Chutney
|Impeded apple||1 Large, cored and chopped|
|Chopped celery||1 Cup (16 tbs)|
|Chopped green pepper||1⁄4 Cup (4 tbs)|
|Chopped onion||1 Tablespoon|
|Sliced cling peach juice||32 Ounce|
|Seedless raisins||1⁄2 Cup (8 tbs)|
|Cider vinegar||3⁄4 Cup (12 tbs)|
|Sugar||1⁄2 Cup (8 tbs)|
|Cayenne pepper||1 Dash|
Combine all ingredients in 3-quart casserole.
Microwave 5 minutes on HIGH, or until mixture boils.
Microwave 45 minutes on '5', or until syrup is thickened and chutney is desired consistency, stirring 2 or 3 times.
Ladle into hot sterilized jars.
Store in refrigerator.
Serve with meats.
Note: Be sure mixture is boiling before reducing setting to '5'.
