Grandma's Tomato Chutney

  Tomatoes 2 Kilogram
  Sugar 1 1⁄2 Kilogram
  Sugar cane vinegar 1⁄2 Cup (8 tbs)
  Chili powder 1 Tablespoon
  Dried ginger 1 Teaspoon
  Dried garlic 1 Tablespoon
  Fresh mint 1 Tablespoon
  Salt To Taste

1. Place the tomatoes in a pan of boiling water for five minutes. Drain the water and peel, deseed and chop tomatoes into large pieces.
2. Place the sugar, vinegar, salt and a cup of water in a large saucepan and heat slowly over a medium flame. When the mixture starts bubbling add the garlic, ginger, spice powders, mint and tomatoes and keep stirring till the mixture thickens. Add as much salt as desired. Taste and if required add more vinegar.
3. When the mixture thickens, fill into jam jars, cool and cover tightly.
4. Always taste for sugar and salt.
