4 Fruit Chutney
|Tart apples||3 Pound|
|Peeled onions||1 1⁄2 Pound|
|Vinegar||4 Cup (64 tbs)|
|Crystallized ginger||4 Ounce|
|Garlic||2 Clove (10 gm)|
|Chili peppers/3 hot pickled banana peppers||4|
|Brown sugar||4 Cup (64 tbs)|
|Seedless raisins||1 1⁄2 Cup (24 tbs)|
Quarter apples, onions, carrots, oranges and lemon, and grind with coarse blade of food chopper; or use blender, grinding small quantities at a time, adding some of vinegar with fruit and vegetable quarters.
Grind or chop ginger and garlic.
Grind hot peppers if you use them in place of chili peppers.
Mix all ingredients in large saucepan, and bring to boil.
Simmer until mixture thickens, stirring occasionally to prevent sticking, about 1-1 1/2 hours.
Ladle into sterilized jars, and seal.
Makes 10-12 (8-ounce) jars.
