Peach Garlic Chutney

Ingredients
  Fresh peaches 4 Quart, peeled, finely chopped
  Chopped onion 1 Cup (16 tbs)
  Raisins 1 Cup (16 tbs)
  Garlic 1 Clove (5 gm), minced
  Red pepper 1
  Firmly packed brown sugar 3 Cup (48 tbs)
  Mustard seeds 1⁄4 Cup (4 tbs) (Use Whole)
  Ground ginger 2 Tablespoon
  Salt 2 Teaspoon
  Vinegar 5 Cup (80 tbs) (5% Acidity)
Directions

MAKING
1)In a large dutch oven mix peaches, onion, raisins,clove garlic,brown sugar ,red pepper,mustard seeds, ground ginger, salt,vinegar together.
2)Boil the mixture stirring frequently.
3)Later stir for atleast 2 hours by reducing heat till the mixture is thickened.
4)Discard red pepper from the mixture.
5)Further spoon chutney into hot sterilized jars, leaving 1/4 inch headspace, cover at once with metal lids, and screw bands tight.
6)Let it boil for atleast ten minutes.
SERVING
7)This chutney can be served with any of the side dish.
