  Peaches 2 Quart
  Tart apples 4
  Lemon 1
  Crystallized ginger 4 Ounce
  Raisins 1 Cup (16 tbs)
  Brown sugar 1 Pound
  Vinegar 1 Pint
  Instant onions 1⁄2 Cup (8 tbs), chopped
  Instant minced garlic 1⁄8 Teaspoon
  Ground ginger 1 Teaspoon
  Salt 2 Teaspoon
  Mustard seed 2 Tablespoon
  Ground cloves 1 Teaspoon
  Cayenne pepper/Red pepper 1⁄2 Teaspoon
  Ground cinnamon 1⁄2 Teaspoon
Directions

GETTING READY
1) Peel peaches and slice them.
2) Peel apples and chop coarsely.
3) Thinly slice lemon.
4) Chop crystallized ginger.

MAKING
5) In a saucepan mix all ingredients and simmer 1 1/2 hours.
6) Transfer into hot sterilized jars, leaving 1/4-inch head space.
7) Seal immediately.

SERVING
8) Serve as a condiment with curry, lamb, beef or duckling.
