Hot Apple Chutney
|Seedless raisins||1 Cup (16 tbs)|
|Currants||1 Cup (16 tbs)|
|Green apples||18 Cup (288 tbs)|
|Chopped preserved ginger||1 Cup (16 tbs)|
|Garlic||5 Clove (25 gm)|
|Vinegar||2 Cup (32 tbs)|
|Brown sugar||7 Cup (112 tbs)|
Grind raisins, currants and peppers; pare and chop apples.
Combine raisins, currants and peppers with ginger, onion, garlic, salt, vinegar, sugar and 1 cup water in large kettle.
Bring to a boil; boil for 45 minutes.
Add apples; reduce heat.
Simmer for 1 hour and 30 minutes or until fruit is transparent.
Seal in sterilized jars.
