Fresh Pineapple Chutney

Ingredients
  Pineapple 1 , peeled, cored and diced
  Minced coriander 1⁄4 Cup (4 tbs)
  Minced mint 1⁄4 Cup (4 tbs)
  Green chili pepper 1 , seeded and finely chopped
  Lime juice 2 Tablespoon
  Peeled grated ginger 1 Tablespoon
Directions

MAKING
1. In a large bowl, mix the pineapple, coriander, mint, peppers, lime juice, and boil for 30 mins.
2. Let the mixture stand covered for 30 minutes before serving

SERVING
3. Serve as a relish with roasts or with fried chicken
