Fresh Pineapple Chutney
|Pineapples||2 Small, peeled, cored and diced|
|Fresh mint||1⁄2 Cup (8 tbs), minced|
|Green chili pepper||To Taste, seeded and finely chopped|
|Fresh ginger||2 Tablespoon, grated|
|Lime juice||2 Tablespoon|
1) In a large mixing bowl, combine the pineapple, mint, peppers, ginger and lime juice.
2) Let the mixture stand at room temperature for 30 minutes before serving time.
3) Serve the chutney as an accompaniment to Grilled Pork Tenderloin or Honey-Glazed Ham.
