New Zealand Rhubarb Chutney

Ingredients
  Diced rhubarb 3 Cup (48 tbs), 1 inch piece
  Vinegar 1 Cup (16 tbs)
  Thinly sliced onions 2 Cup (32 tbs)
  Garlic 1 Clove (5 gm), minced
  Curry powder 2 Teaspoon
  Brown sugar 1 1⁄2 Cup (24 tbs)
  Salt 1 Teaspoon
  Cloves 1⁄2 Teaspoon
  Cayenne 1⁄8 Teaspoon
  Cinnamon 1 Teaspoon
  Grated ginger 1 Tablespoon
  Lemon 1 , grated peel, juice and pulp
  Raisins 1⁄2 Cup (8 tbs)
  Prepared mustard 1 1⁄2 Teaspoon
  Mustard seeds 2 Tablespoon
Directions

Simmer all ingredients together over low heat, stirring occasionally, until thick (about 30 to 40 minutes).
Pack into sterilized 1/2-pint jars and process 10 minutes in boiling water bath.
