Papaya Tomatillo Chutney

|Tomatillos||3⁄4 Pound, husked, rinsed, cored and quartered|
|Papaya||1 Large, peeled and cut into 1/2 inch dices|
|Red bell peppers||2 Small, seeded, cut into 1/2 inch dices|
|Green bell pepper||1 Small, seeded, cut into 1/2 inch dices|
|Scallion whites||8 , thinly sliced|
|Jalapeno peppers||2 Small, seeded and minced|
|Red wine vinegar||3⁄4 Cup (12 tbs)|
|Pineapple||1⁄2 , diced (Fresh)|
|Light brown sugar||1⁄2 Cup (8 tbs)|
|Fresh coriander||1 Tablespoon, chopped|
|Garlic||1 Clove (5 gm), minced|
1) In a large saucepan add all the ingredients.
2) Bring to a boil over high heat, stirring continuously
3) Simmer it for 30-35 minute, stirring occasionally, until thick.
4) Transfer to a bowl, cool and serve.
