Merlot Plum Chutney

|Peanut oil||1 Teaspoon|
|Red onion||1 , julienned|
|Grated fresh ginger||1 Tablespoon|
|Merlot||60 Milliliter (1/4 Cup)|
|Sliced plums||475 Milliliter (2 Cups, Fresh Ones)|
|Orange zest||1 Pinch|
In a skillet, over medium heat, add peanut oil and saute onion and ginger for 2 to 3 minutes.
Add Merlot, plums, and orange zest.
Cover, reduce heat, and simmer until plums are quite mushy and sauce has thickened.
