Sweet Pineapple Chutney

Ingredients
  Pineapple 1 Medium, peeled, finely chopped
  Ground cumin 1 1⁄2 Teaspoon
  Fennel 1 Teaspoon, ground
  Ground cinnamon 1⁄4 Teaspoon
  Ground coriander 1⁄4 Teaspoon
  Cayenne pepper 1⁄4 Teaspoon
  Black pepper 1⁄4 Teaspoon
  Lemon 1 , juiced
  Salt 1 Teaspoon
  Sugar 1 1⁄2 Cup (24 tbs)
Directions

Bring pineapple, cumin, fennel, cinnamon, coriander, cayenne pepper, black pepper, lemon juice, salt and sugar to a boil in non-aluminum saucepan, stirring frequently; reduce heat.
Simmer for 30 minutes or until consistency of jam, stirring frequently.
Spoon into two 1/2-pint sterilized jars; seal with 2-piece lids.
