Fresh apple and mint chutney
|Apples||4 (preferably Bramely)|
|Dried tamarind||1⁄2 Tablespoon (1/2 packet)|
|Green pepper||1 Medium|
|Lemon||1⁄2 , juiced|
|Green chillies||4 Small|
|Fresh mint||1 Bunch (100 gm) (large bunch)|
|Coriander||1⁄2 Bunch (50 gm)|
|Caster sugar||2 Tablespoon|
|Water||1 Cup (16 tbs)|
Soak the tamarind in a little water to soften and pass through a sieve to extract the juice. Set the tamarind juice to one side. Roughly chop the apples keeping the skin on, and squeeze the lemon juice over them. This stops the apples turning brown.
Coarsely chop the chillies, coriander, green pepper and mint. Put all the ingredients in a blender and whizz to a fine consistency.
This chutney freezes very successfully, and can be used with a wide range of dishes from curries to roast meats. You can vary the amounts of sugar, tamarind water and chillies to give a sweeter, hotter or more sour result.
