Apple And Apricot Chutney

  Dried apricots 1⁄2 Cup (8 tbs)
  Water 1⁄2 Cup (8 tbs) (Adjust Quantity As Need To Cover)
  Tart apples 2 , chopped
  Lime/1/2 lemon 1 , seeded and thinly sliced, including rind
  Garlic 1 Clove (5 gm), minced
  Ginger 1⁄2 Teaspoon
  Whole cloves 4
  Coriander 1⁄2 Teaspoon
  Chili powder To Taste
  Cashew nuts 1⁄2 Cup (8 tbs)

In a saucepan, bring apricots to a boil in water to cover and simmer until soft.
Add apples, cover pan and simmer until apples are soft.
Add lime or lemon slices, garlic and spices.
Continue to cook for a minute or two.
Add cashew nuts and cool.
Serve at room temperature.
