Mango Raisin Chutney

Ingredients
  Mangoes 1⁄2 Kilogram
  Sugar 1 Cup (16 tbs)
  Garlic 25 Gram
  Ginger 25 Gram
  Salt 60 Gram
  Vinegar 1 Cup (16 tbs)
  Raisins 2 Tablespoon
  Chili powder 2 Teaspoon
  Garam masala powder 1 Teaspoon
  Pepper powder 1⁄2 Teaspoon
  Turmeric powder 1 Pinch
  Oil 2 Tablespoon
Directions

1. Wash, wipe dry, peel and slice the mangoes into very small pieces. Clean the raisins.
2. In 2 tablespoons of vinegar grind the ginger and garlic.
3. Heat the oil, add the ground paste, and saute for 2-3 minutes adding all the powdered masalas.
4. Add the rest of the vinegar, salt, sugar, mango pieces and raisins, and simmer on low heat until a chutney consistency is reached. Remove from fire.
5. Cool thoroughly and bottle. It will keep 3-4 months.
