Pear Cantaloupe Chutney

Ingredients
  Bartlett pears 4
  Cantaloupe 4 Cup (64 tbs), diced
  Pitted sliced dates 1⁄2 Cup (8 tbs)
  Chopped onion 1⁄2 Cup (8 tbs)
  Chopped preserved ginger 2 Tablespoon
  Slivered lemon rind 2 Tablespoon
  Cider vinegar 1 Cup (16 tbs)
  Brown sugar 1 Cup (16 tbs) (Packed)
  Salt 1 Teaspoon
  Hot sauce 6 Drop
  Chopped green pepper 1⁄2 Cup (8 tbs)
Directions

Peel and core pears; slice lengthwise.
Combine pears, cantaloupe, dates, onion, ginger and lemon rind with vinegar, brown sugar, salt and hot sauce.
Bring to a boil; reduce heat.
Simmer, stirring occasionally, for 40 minutes or until thickened.
Add green pepper; simmer for 5 minutes longer.
Seal in sterilized jars.
