Peach Chutney With Raisins
|Coarsely chopped peaches||2 Cup (32 tbs) (2 Large Size)|
|Raisins||1 Cup (16 tbs)|
|Packed brown sugar||1 Cup (16 tbs)|
|Lemon juice||1⁄3 Cup (5.33 tbs)|
|Crystallized ginger||2 1⁄2 Ounce, finely chopped (1 Jar)|
|Garlic||1 Clove (5 gm), finely chopped|
1. Mix all ingredients in 2-quart casserole. Cover tightly and microwave on high 10 to 12 minutes, stirring after 5 minutes, until peaches are transparent and mixture is syrupy.
2. Refrigerate at least 2 hours until chilled. Cover and refrigerate any remaining chutney up to 2 weeks.
