Grated Mango Chutney

Ingredients
  Raw mango 3 1⁄2 Kilogram, grated or cut into tiny pieces
  Sugar 3 1⁄2 Kilogram
  Red seedless raisins 250 Gram
  Red kashmiri chili powder 50 Gram
  Vinegar 6 Ounce (1 Tea Cup)
  Cinnamon 2⁄3 Tablespoon
  Clove 2⁄3 Tablespoon
  Black pepper powder 2⁄3 Tablespoon
  Chopped garlic 2 Tablespoon
  Roasted crushed cumin seeds 2 Tablespoon
  Asafoetida 5 Gram
  Salt 2 Tablespoon
Directions

Place the grated mangoes, sugar, vinegar and garlic in a large, heavy dekchi over a slow fire. Allow the sugar to melt and keep stirring off and on for 20 minutes. Add the raisins, spices, salt, chilli and spice powders and asafoetida and stir vigorously till the syrup becomes sticky. Remove from the fire and cool. Store in clean bottles.
