Chunky Semi Ripe Mango Chutney

Ingredients
  Peeled mangoes 600 Gram, chopped into tiny squares (raw)
  Sugar 900 Gram
  Chilli powder 1 Tablespoon
  Ground cinnamon 1⁄4 Tablespoon
  Ground cloves 1⁄4 Tablespoon
  Ground black pepper 1⁄4 Tablespoon
  Ground cardamom seeds 1⁄4 Tablespoon
  Seedless raisins 1⁄2 Cup (8 tbs)
  Fresh ginger 1 Tablespoon, julienned
  Salt To Taste
Directions

Place the mango pieces and sugar in a sturdy, thick-bottomed vessel. Allow the sugar to melt.
Place on a medium flame and keep stirring until the sugar has completely melted. Add the ginger pieces.
When the mango has softened and the syrup has become thick and sticky, add a little salt. Stir and add the raisins. Then add the chilli powder and the ground spices. Stir vigorously for 5 minutes and remove from fire.
Cool. Fill into airtight jars.
