Chunky Semi Ripe Mango Chutney
|Peeled mangoes||600 Gram, chopped into tiny squares (raw)|
|Chilli powder||1 Tablespoon|
|Ground cinnamon||1⁄4 Tablespoon|
|Ground cloves||1⁄4 Tablespoon|
|Ground black pepper||1⁄4 Tablespoon|
|Ground cardamom seeds||1⁄4 Tablespoon|
|Seedless raisins||1⁄2 Cup (8 tbs)|
|Fresh ginger||1 Tablespoon, julienned|
Place the mango pieces and sugar in a sturdy, thick-bottomed vessel. Allow the sugar to melt.
Place on a medium flame and keep stirring until the sugar has completely melted. Add the ginger pieces.
When the mango has softened and the syrup has become thick and sticky, add a little salt. Stir and add the raisins. Then add the chilli powder and the ground spices. Stir vigorously for 5 minutes and remove from fire.
Cool. Fill into airtight jars.
